Cilantro-Lime Rice

UPDATED 11/22/09:
For our Island Fever BBQ party, we served this rice dish with our Pineapple-Stuffed Jerk Chicken. It was the perfect accompaniment! Light, refreshing, and delicious- and my DB even said "it tastes just like Chipotle's!". Since the ingredients are minimal, it's important to use fresh ingredients.

1 cup extra long grain rice or basmati rice
2 cups water
4 tsp vegetable oil, divided
1 tsp salt
3 Tbsp fresh chopped cilantro
1/2 lime, juice of

1. In a small heavy pot, add rice, water, 1 tsp oil and salt. Boil on high until most of the water evaporates.
2. When the water just skims the top of the rice, reduce to low and cover about 15 minutes.
3. Shut off flame and keep covered an additional 5 minutes.
4. In a medium bowl, combine chopped cilantro, lime juice, rice and remaining oil and toss until completely mixed.
