Homemade Cheesy Bread

I swear, the picture does this dish no justice. This is another dish I've been making since college, especially to accompany my Angel Chicken Pasta or Lasagna dish (or any dish for that matter!). I've always just "threw ingredients" together, never taking notice of the measurements. Since my DB likes this so much and has started to enjoy cooking, I whipped out my measuring cups and placed measurements tonight. It only uses 5 ingredients, but the taste is amazing. It gets rave reviews from friends and guests, and is a crowd pleaser- it's always one of the items to run out. Try it for yourself!


  • Hearty, crusty Sub roll or thick, crusty bread (We usually get 2 Hearty Grain long sub rolls, totaling 1 lb.)

Cheese Topping

  • 4-oz Cream cheese with chives (reduced-fat is fine)
  • 1/4 cup Hellmann's mayo (use regular, not reduced-fat nor fat-free)
  • 3 Tbsp sour cream (fat-free is fine)
  • 1 cup Kraft Parmesan cheese (use regular, not reduced-fat)

1. Split the bread/sub roll in half. Toast the bread until lightly browned. (When making the Angel Chicken Pasta or Lasagna dishes, place it in the oven for the last 15-20 minutes of baking time.)

2. While the bread is toasting, mix all the Cheese Topping ingredients in a small bowl.

3. Once the bread is lightly toasted, remove from oven and increase oven temperature to broil.
4. Place the topping mixture on top of the bread and place back into the oven until lightly browned on top. This will only take a minute or two- Make sure to watch the bread closely; the cheesy topping mixture browns quickly!

It will go from here (top picture) to here (bottom picture) in a matter of a minute, so watch the bread closely!

Yield: Topping mixture will yield enough for 1 sub roll (1/2 lb.) If using both sub rolls (totaling 1 lb.), I'd double the recipe.
