Island Fever BBQ Party!

My DB and his friend AJ go way back, and I've really enjoyed hanging out with him and his wife Rachel. They're a hoot, and a lot of fun! They recently invited us over to their home and we had a fun and relaxing evening grilling out. For the chicken kabobs, Rachel made her special Caribbean Jerk marinade concoction. It was my first taste of Caribbean flavors, and DB and I really enjoyed it. Since then, I've been trying to find additional recipes that host these types of ingredients (cilantro, lime, cumin, etc.) I'm dying to try them out! This weekend, we hosted them for dinner and the following list was our menu. The menu consisted of tropical flavors- papaya, mango, limes, strawberries, cilantro, pineapples... The menu was light, refreshing, and health-conscious. It got rave reviews!
