Gale Gand's Quick Vanilla Buttercream

An easy and great-tasting buttercream frosting! It is light, fluffy, and fool-proof. I used this to make the buttercream frosting for my Mini "Burgers and Fries". Enjoy!

3 cups powdered sugar (I used 2-1/2 cups)
1 cup butter, room temperature
Pinch of salt
1 tsp vanilla extract
1-2 Tbsp heaving whipping cream

1. In a standing mixer fitted with a whisk, mix together sugar and butter. Mix on low speed until well blended and then increase speed to medium and beat for another 3 minutes.
2. Add a pinch of salt.
3. Add vanilla and cream, and continue to beat on medium speed for 1 minute more, adding more cream if needed for spreading consistency.
