Banana Bread with Cinnamon Crumble Topping


This banana bread recipe spanked my old banana bread recipe. SUPER MOIST and tender with an excellent cinnamon crunch topping. This recipe is different than the rest with the addition of honey, and even after baking, you can taste a slight sweet hint of it. I liked that this recipe didn't require a stand mixer as well. As for the cinnamon crumble topping- while it tasted good, it was messy when I a) tried to flip the bread out of the pan, and b) when I tried to cut it into slices... cinnamon sugar everywhere. I'm going to try "patting" down the sugar into the bread mixture before baking, or try a streusel-like topping next time... hmm, maybe some chocolate chips too. I know this is "operator error", but the bread was slightly undercooked (in the center); thus after 60 minutes of baking, I will "tent" the bread with foil and continue cooking for another 10-15 minutes until it is fully cooked.


Did I mention it's INCREDIBLY moist? Loved it!

Ingredients:
For the Bread
1-1/2 cups all purpose flour
1 cup sugar
1 tsp ground cinnamon
1 tsp baking soda
1/2 tsp salt
1 cup mashed ripe bananas (2-3 medium)
2 large eggs
1/2 cup vegetable oil
1/4 cup honey*
1/4 cup water
2-1/2 Tbsp packed golden brown sugar

For the Cinnamon Crumble Topping
2 Tbsp sugar
2-1/2 Tbsp packed golden brown sugar
1 tsp cinnamon

Directions:
1. Preheat oven to 350°F. Butter and flour 9x5x3-inch metal baking pan.
2. Whisk flour, sugar, cinnamon, baking soda, and salt in medium bowl.
3. Whisk next 5 ingredients (banana through water) in large bowl until smooth.
4. Add dry ingredients; stir to blend.
5. Transfer batter to pan.
6. Add the topping ingredients in a small bowl and stir to combine.
7. Bake bread until tester inserted into center comes out clean, about 1 hour.
8. Cool bread in pan 30 minutes.
9. Turn pan on its side; slide out bread, being careful not to dislodge topping. Turn bread right side up and cool completely.

* Tip: Spray your measuring cup with cooking spray before measuring out the honey. This will ensure your honey will come out quickly with no spatula needed!
