Garlic-Roasted Asparagus

A great twist on an old favorite- yet still so simple, uses minimal ingredients, but with maximum flavor. The lemon adds a refreshing flavor! A perfect accompaniment for any side, including this dish I made tonight.

Ingredients:
2 lbs asparagus, tough ends trimmed, rinsed and patted dry
3 Tbsp extra-virgin olive oil
1-1/2 Tbsp minced garlic
Salt
Freshly ground black pepper
2 tsp fresh lemon juice

Directions:
1. Preheat the oven to 425 degrees F.
2. In a large glass baking dish, toss the asparagus with the olive oil and garlic. Season lightly with salt and pepper, and toss.
3. Bake until the asparagus are tender and lightly browned, 15 to 20 minutes, depending upon the thickness of the stalks, stirring twice.
4. Remove from the oven and toss with the lemon juice.
5. Adjust the seasoning, to taste. Serve warm or at room temperature.
