Roasted Broccoli with Parmesan

We started watching the Next Food Network Star this year for the first time. Although we were rooting for Jeffrey, Melissa's efficient tips and methods of cooking made her the new winner. She recently came out with her new show, $10 Dinners, and we happened to fall upon it one morning. I'm always looking for easy and healthy recipes to incorporate vegetables, and this recipe looked great.

Wow- this recipe was so easy and healthy. We paired this dish with this pork entree. Be sure to use the allotted amount of olive oil- a little went a long way in this recipe. I loved the addition of the grated Parmesan. Next time, I might try adding a sprinkle of fresh lemon juice too.

1 head broccoli
1 Tbsp olive oil
Salt and freshly ground black pepper
2 Tbsp grated Parmesan

1. Preheat your oven to 400 degrees F.
2. Peel the outer layer of the broccoli stalks.
3. Cut the broccoli lengthwisem keeping the stalk and broccoli florets intact. (The long broccoli spears should resemble trees.)
4. Arrange in a single layer on a baking sheet. Drizzle with olive oil and season with salt and pepper, to taste.
5. Toss to coat and roast until nicely caramelized, about 15 minutes.
6. Turn broccoli over and sprinkle with grated the Parmesan.
7. Cook until the Parmesan melts, about 5 minutes.
8. Transfer to a serving bowl or platter and serve immediately.
