Cheddar-Parmesan Scallion Drop Biscuits

These reminded me of Red Lobster's Cheddar Bay Biscuits- similar, but not quite THE ONE (yet). I added Parmesan cheese to this recipe, but I felt the flavor was lost between the Cheddar and green onions. The texture was perfect, and the cheese was melting upon eating the biscuit. An easy and delicious, light and delicate biscuit recipe!

Ingredients:
2-1/4 cups all-purpose flour
2-1/2 tsp baking powder
2 tsp sugar
3/4 tsp baking soda
1 tsp Lawry's salt
1/2 tsp garlic powder, divided
6 Tbsp (3/4 stick) cold unsalted butter, cut into 1/2-inch cubes
8-oz block Sharp Cheddar, coarsely grated (2 cups)
1/2 cup Parmesan
6 scallions, finely chopped (white and 2/3 of green parts)
1 cup well-shaken buttermilk
1/4 cup (4 Tbsp) butter, melted

Directions:
1. Preheat oven to 425°F.
2. Whisk together flour, baking powder, sugar, baking soda, salt, and 1/4 tsp garlic powder in a bowl, then blend in butter with your fingertips until mixture resembles coarse meal.
3. Stir in Cheddar, Parmesan, and scallions.
4. Add buttermilk and stir until just combined. (Dough will be very sticky.)
5. Drop dough in 12 equal mounds about 2 inches apart onto a buttered large baking sheet.
6. Bake in middle of oven until golden, 15 minutes.
7. While baking, combine the melted butter and remaining 1/4 tsp garlic powder. Brush butter-garlic mixture over hot biscuits once baked.
