Watermelon, Arugula, and Feta Salad

This salad is a great summer salad combining fresh watermelon, tangy feta cheese, and peppery arugula topped with a balsamic vinaigrette dressing- perfect for a hot summer evening! The salad tasted refreshing and was delicious. 


Watermelon Arugula and Feta Salad

Ingredients: 
  • 3 cups seedless watermelon, cubed and chilled
  • 1/2 cup crumbled feta
  • 7-oz arugula (Can substitute with baby spinach)
  • 1/4 small red onion, sliced very thin
  • 2 Tbsp balsamic vinegar
  • 2 Tbsp extra virgin olive oil
  • kosher salt and fresh pepper
Directions:
  1. Wash arugula and dry well. 
  2. In a large bowl whisk vinegar, olive oil, salt and pepper.
  3. Toss with the remaining ingredients and serve

YUM. this sounds super good (i subscribed to this blog too hahaha...we love food!). we will make this sometime!

another good fruit/salad combo that we've tried is sliced strawberries, black pepper boursin crumbled up, chopped walnuts and lettuce. drizzle with balsamic. AMAZING :)
