I love trail mixes- it's a filling snack that is full of healthy fats! However, most pre-packaged kinds include peanuts and chocolate chips. Since I have been trying to keep my blood sugar in check, I've eliminated the chocolate chips and am using unsweetened shaved coconut. I purchased the sunflower seed kernels, pumpkin seeds ("pepitas"), almond slivers, and dried pineapple at Trader Joe's, and the shaved unsweetened coconut at Whole Foods. While it was initially expensive ($24 total), it made a HUGE container of trail mix- it almost filled my 16.75 cup Lock N Lock container. I portion out 1/4 cup to take with me to work, and carry it as a snack in my purse. It is light, portable, and a satisfying snack.
- 16-oz roasted, unsalted sunflower seed kernels
- 16-oz raw, unsalted pumpkin seeds (or pepitas)
- 8-oz roasted, unsalted almond slivers
- 6-oz dried pineapple, chopped
- 5-oz dried, shaved coconut (I like to toast them, instructions below)
Directions: Toss all ingredients together.
How to toast coconut flakes: Spread the shaved coconut flakes on a shallow-rimmed baking sheet lined with foil. Bake in a preheated 325 degree oven for 4-5 minutes. (It doesn't take long!)
